I mentioned serving biscuits with my fabulous raspberry glazed chicken in the last post--and I confused people. Because I forgot that biscuit can mean different things in different countries.

In Europe and most other countries, these are biscuits.

In the United States, these are biscuits. And these are what this ole hick was talking about.
Schwan's (the delivery service that I get much of my food from) makes really good ones. I use these because I'm lazy. But this is a recipe for those who are a little more inspired.
Southern-Style Buttermilk Biscuits

Your Guide to Southern U.S. Cuisine.
Delicious buttermilk biscuits, made with shortening and butter, along with buttermilk and other ingredients. Soft southern flour will make these even lighter, but any all-purpose flour will be fine.
INGREDIENTS:
2 cups all-purpose flour, stirred before measuring*
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/4 cup lard or vegetable shortening, chilled
2 tablespoons butter, chilled
3/4 cup buttermilk
PREPARATION:
Heat oven to 450°. Adjust oven rack to center position.
In a large bowl, combine flour, baking powder, soda, and salt. Cut in chilled shortening and butter until you have pieces the size of small peas.
Make a well in center of dry ingredients; pour in buttermilk. With a wooden spoon, gently blend dry ingredients into the buttermilk, just until mixture is clumping together. If necessary, add a few more teaspoons of buttermilk.
Transfer dough to a lightly floured board. Pat out in a circle about 8 inches in diameter and 1/2-inch thick. Using a 2 1/2 to 3-inch biscuit cutter, cut out and place on ungreased baking sheet. Bake on center oven rack for about 10 to 12 minutes, until tops are browned.
Makes 10 to 12 biscuits, depending on size of cutter.
*For the lightest biscuits, use a Southern white all-purpose flour if available.
If I ever go to England I might just be fool enough to order biscuits and gravy and an iced tea. That should get me some looks and possibly a straight jacket!

oh man..i miss biscuits...hot steaming and covered with butter and honey...sigh*...well, my blood sugar is low enough that maybe i will be able to sneak one in once in a while...but still need to keep losing weight..and can't do it eating biscuits..dangit
Biscuits - bread like food that needs to have butter or gravy to complete it.
Cookies - what they call biscuits in the UK.
Air Biscuit - what happens of you eat too many beans, or feed broccoli to your dog.
biscuits are the normal ones up the top the ones you gave a recipe to are scones :P

Well, whatever they're called, either kind is delicious!
I had a scone once with some currants in it--very good!
I could still see myself going to England or Australia or such and asking for "biscuits and gravy" and having the waiter tell the hostess to call the Loony Hatch.
If it's a biscuit I love it. All of them. Scones are wonderful too.
